I found that a vertical Freudian slip helped with the organization of the main compartment of my SA. And yes, I overpack it.
I like having the shop bags open at the top. They hold more groceries that way.

You will love your CoPilot. I got one a couple months ago (steel dyneema/solar) and I don't leave town without it. Love it!!
I prefer stuff sacks in a color that contrasts with the lining color so I can find the stuff sack. When they match it's like camouflage.
I carry a Kleen Kanteen 18 oz. It fits well in the Co-Pilot water bottle pocket.
A stiff backed legal pad would provide stiffening and also extra paper for notes.

I own both the SCB and the MCB. To help put it in perspective, I can fit a file folder in my MCB but not in my SCB. You might be happier with the MCB.
I shop at a couple grocery stores that offer "bag discounts". I make sure I grab my TB shop bags when I shop there. The bags may actually pay for themselves.

@kkintea - good point about the zippers on the Swift and LS. Yarn can get caught on the zippers. I believe that's why they have a button closure.
